I bought a kilo of eggplant from Tita Brenda today at the farm... They were so fresh and of course organic...
So when I got home I was so hungry, I made something really quick for dinner.. Eggplant Parmigiana!
Prepared the Pomodoro sauce last night with tuna, fresh tomatoes, garlic, onions and mushrooms... Then just put them together with Xilca's goat cheese... also from the Farm!
Was a great dinner with half a slice of tosted whole wheat bread.
Perfection!
